NoNa's Quajado Recipe
Shoshana Bean, Saturday Night Seder Cast Member
INGREDIENTS:
- 1& 1/2 lbs. of fresh spinach. (I get the prewashed spinach in plastic bins or bags) torn 
- Or 3 pkgs frozen spinach drained & squeezed 
- 6-8 eggs beaten 
- 1 c. matza meal 
- 1 8 oz brick cream cheese 
- 1 lb cottage cheese 
- 1 c. grated romano cheese (I adjust cheeses trying not to make it too creamy cheesy by using less but this combo is good) 
DIRECTIONS
- Melt cream cheese over double boiler & add to cottage cheese (best at room temp). 
- Stir in eggs & matza meal & spinach 
- Add salt & pepper to taste. 
- Pour into a well-oiled 9x13 baking dish and bake at 350 for 40-60 minutes checking to see when spinach pulls away from the side of the pan or a toothpick inserted 2" from the side of the pan comes out clean-ish - A note from Shoshana: - Really all these recipes are adjusted by texture and sight! A little more. A little less.
